Lavender Gin Sour
It's cocktail hour so here's a new twist on a good old fashioned standby. This drink gets its beautiful purple hue from Empress gin, which uses butterfly pea flowers to a dramatic addition to cocktails. This recipe can be easily made using any gin that you may have on hand.

Ingredients
Lavender Simple Syrup
- 1 cup white sugar
- 1 cup water
- 1 tablespoon Terre Bleu Lavender Culinary Bud
Cocktail
- 2 oz Lavender Simple Syrup
- 2 oz Fresh squeezed lemon juice
- 4 oz Gin (Empress gives a beautiful purple colour)
- 2 egg whites
- Ice
Directions
Lavender Simple Syrup
- Bring 1 cup water and 1 cup sugar to boil.
- Stir in culinary lavender. Remove from heat and allow to cool to room temperature.
- Strain the lavender out of the syrup and store in refrigerator until ready to use.
Cocktail
- In a cocktail shaker (a mason jar also works well!) pour the lavender simple syrup, lemon juice, gin and eggs whites. Shake well until the egg whites are foamy.
- Add ice to shaker and shake again until well-chilled.
- Using a cocktail strainer, pour the drink equally into 2 cups with ice.
- Serve with a lavender spring garnish and lemon slice.
