Lavender Gin Sour

It's cocktail hour so here's a new twist on a good old fashioned standby.  This drink gets its beautiful purple hue from Empress gin, which uses butterfly pea flowers to a dramatic addition to cocktails. This recipe can be easily made using any gin that you may have on hand.

Makes 2 drinks

Prep Time: 10 minutes

Ingredients

Lavender Simple Syrup

  • 1 cup white sugar
  • 1 cup water
  • 1 tablespoon Terre Bleu Lavender Culinary Bud

Cocktail

  • 2 oz Lavender Simple Syrup
  • 2 oz Fresh squeezed lemon juice
  • 4 oz Gin (Empress gives a beautiful purple colour)
  • 2 egg whites
  • Ice

Directions 

Lavender Simple Syrup

  1. Bring 1 cup water and 1 cup sugar to boil.
  2. Stir in culinary lavender. Remove from heat and allow to cool to room temperature.
  3. Strain the lavender out of the syrup and store in refrigerator until ready to use. 

Cocktail

  1. In a cocktail shaker (a mason jar also works well!) pour the lavender simple syrup, lemon juice, gin and eggs whites. Shake well until the egg whites are foamy.
  2. Add ice to shaker and shake again until well-chilled.
  3. Using a cocktail strainer, pour the drink equally into 2 cups with ice.
  4. Serve with a lavender spring garnish and lemon slice.
